Kampot Green Peppercorns - Cambodia
Organic and Fair Trade Kampot Green Peppercorns are traditionally grown and hand-harvested before they are ripe. After hand-harvesting, these peppercorns are dehydrated to preserve the bright taste and green color. The peppercorns have a full aroma of fresh herbs and citrus.
Kampot Pepper is organically grown and has been awarded with a PGI (Protected Geographical Indications). PGI is similar to the AOC of France (Appellation d'Origine Controlee), given to Champagne, Roquefort cheese, or other products that are authentic only when produced in their specific region.
Green peppercorns can be used in a pepper grinder, or, to rehydrate, soak the peppercorns in warm water for 30 minutes and add to a sauce.
Green peppercorns are particularly delicious with:
- Cream sauces for steaks or chicken breasts
- Scallops or shrimp
- Steamed or poached fish with lemon juice and olive oil
- Fresh cheeses such as mozzarella, feta, goat, or cream cheese
- Fresh fruit: pineapple, mango, peaches, oranges, or tangerines
- Poached or cooked fruit: pears, apricots, or apples
- Citrus desserts
For best flavor and potency when not using, keep tightly closed in a cool, dark cupboard away from direct heat or sunlight.
