A genuine Provencal oil. The olives are hand-harvested early then cold-pressed within 24 hours of harvest to reflect the true Provencal terroir.
The oil is made with four olive varieties native to the groves of Domaine Castelas: Salonenque, Aglandau, Grossane and Verdale and is an AOC Vallee des Baux de Provence olive oil.
Aromas are reminiscent of cut grass, with flavor hints of artichokes and almonds.
To enjoy this oil and its unique attributes, it is best not to use in cooking. Enjoy instead as a finishing oil or with vinaigrettes and dressings.

Suggestions for Use:
Drizzle over greens with lemon or vinegar and a sprinkle of sea salt and pepper for a light salad
For making vinaigrette
For making Mayonnaise or Aioli
Drizzle over toasted bread or use to make homemade crouton
Adds a nice finish to seafood of poultry
Drizzled over cooked vegetables
Use to make marinated vegetables, such as mushrooms with fresh herbs
