Tenderloin of Beef on Toast with Sagemary Salt

Makes 12 toasts

This is an easy, yet elegant hors d’oeuvre. For a variation, change the flavor of the butter using other didi davis food salt blends.

4 TB unsalted butter
1 tsp. Sagemary Salt
1 tsp. tomato paste, optional
Squeeze or two of fresh lemon juice
Freshly ground black pepper
6 slices white bread (halved) or 12 slices baguette
1 one-pound piece of beef tenderloin, cut into 12 slices

Melt butter into a small saucepan or microwave bowl. Remove from heat and whisk in Sagemary Salt, tomato paste if using, lemon juice, and pepper. Set aside. Arrange oven rack at the top level and heat broiler. Arrange bread slices in a baking sheet with sides and broil bread until light golden, 1 or 2 minutes. Turn toasts over and broil second side for another 30 seconds to 1 minute, being careful not to burn.

Remove pan from oven to a rack, brush toasts with some melted Sagemary butter, arrange beef slices on toasts, brush with more melted butter. Return to broiler and broil beef until cooked and browned on edges, 1 to 2 minutes. Remove from oven, cool a minute or two, and serve.
